(mostly) raw vegan tacos


After my last post, I went to make myself a (mostly) raw vegan taco and thought it'd be the best time to document and share one of our favorite things to make at home.

Before we get into the directions, I want to explain why this is mostly raw and not completely raw. For these tacos, we like to use Food for Life's Ezekiel Sprouted Grain Tortillas. These are not considered raw because they are cooked above 118 degrees. Sprouted grains are much easier to digest than unsprouted grains, and these tortillas contain lots of fiber. They have a really nice, dense and chewy texture that is perfect for tacos. If you really want to make this recipe 100% raw you could use collard greens and make a wrap, or skip the tortilla and make it into a salad.

What you'll need:

Ezekiel Sprouted Grain Tortillas
1 ripe avocado
2 small tomatoes, cut into chunks
1 cucumber, halved and sliced
1 lime
alfalfa sprouts
salt

This is a really easy and customizable recipe. If you like it spicy, add a pepper. If you like onions, add onions. Add ingredients you like. If you make this recipe to your liking, you open yourself up to eating more raw foods and increasing your overall health!

Okay okay, I don't like fish, but Drew has been enjoying his tacos with some local Ahi that my cousin so nicely brought over. Not raw (unless you want the fish to be raw) but still healthy :)





Start with one tortilla on a plate. Using a butter knife, spread some avocado over the tortilla, use as much or as little as you like.




Now squeeze a lime wedge over the avocado, I like lots of lime. We also like to use a raw Spicy Sri Lankan Coconut spread along with the avocado. If you live on Oahu, you can get it from Licious Dishes. As far as I know, they are the only prepared raw food company on the island. If you like it spicy, add a chili pepper or some cayenne powder. Or maybe you'd like to add some raw lemon cashew sour cream, eh? Also, here is where I like to add the salt.





Now you can add your fillings, like tomato, cucumber and alfalfa sprouts.

So there you have it! Mostly raw vegan tacos.
